Honey, Lemon, Ginger Salmon
This is a wonderfully light dish that goes well with fragrant rice and a summer salad.
1 slab of salmon steak
1/4 cup local honey
1/8 cup olive oil
1 tbs. lemon zest
1 tbs. minced fresh ginger
s + p
Pre-heat oven to broil. Warm olive oil and honey in small pot, do not over-heat (sugar burns very fast)!! Add seasonings and whisk until thick and warm. Remove from heat, continue whisking until sauce is thick. Place Salmon in small glass pan. Pour sauce over salmon and coat bottom of fish as well. Place on broiler shelf and broil for 6-8 min. Serve on a bed of rice and drizzle sauce over dish.
